WIAW–A Case of the Mondays

Hey everyone! I hope you’re all having a good week so far. Mine is pretty busy, I had a test yesterday, a presentation tomorrow, an exciting blogger event tonight, and 3 physical therapy appointments!

Since I’m a little strapped for time, we’re going to do a somewhat abbreviated version of WIAW. If you’re new to What I Ate Wednesday, head over to Peas and Crayons to see what it’s all about!

Peas and Crayons

Today’s WIAW comes from Monday, which turned out to be a busy day! I decided to skip my scheduled workout and take a rest day, so my morning started with some devotions and tea:

Then for breakfast I had a microwaved sweet potato with 2 over easy eggs, avocado and sriracha. This has pretty much been my breakfast for weeks now… Loving it.

Right after my morning class, I hung around and chatting with a couple girls and got a little studying done. I snacked on a Health Warrior Chia Bar, which I really liked! I didn’t like their chocolate peanut butter flavor, but this one was really good!

I didn’t have time to head home for lunch after class, so I stopped at a Starbucks right by my physical therapist and had oatmeal with a packet of nuts while I did some more studying.

I was really hungry when I got home from physical therapy, so I made some tea and snacked on an apple, while I had a kabocha squash in the oven!

I chopped it up, sprinkled it with cinnamon and roasted it at 450 degrees for 45 minutes. I ate it with sriracha… this is becoming an addiction. This was part 2 of my afternoon snack:

For dinner I had some spaghetti squash with marinara sauce, chicken sausage and zucchini. I forgot to take a picture so I used an old one where I didn’t have zucchini. My drawing totally looks real… right?


And for dessert: protein ice cream!

    so this thing we have where we are mental twins – i thought it would end after marathon training but apparently it has not? please see my post today because i too have been putting sriracha on EVERYTHING. i’m so glad i got the big container 🙂

    also that sweet potato for breakfast looks awesome. i have some in my fridge that i wasn’t sure how i wanted to use and since i’m mixing up breakfasts this week i think i might make this tomorrow. yum. do you just microwave the potato and then top it with the eggs? right? do you put anything else on it to make it extra delicious? advise me please!

    and yea, that zucchini is totally believable 🙂

      Haha I microwave it (wrapped it a wet paper towel) for about 5 min, and I just cook the eggs on the stove over easy. And when I eat it, I slice the potato open and then mush each side with my fork, and I also cut up the eggs with a fork and knife. Sriracha applied with just about every bite…

    Hehe. I love your spaghetti squash with the drawn-on zucchini! I’m totally doing that if I ever have a food picture missing an ingredient. That’s something that I probably would never have thought to do.

    And I really can’t pick just one squash. Acorn, butternut, spaghetti, pumpkin, zucchini, yellow… I seriously love them all. Sweet potatoes kind of bother my stomach, otherwise those would be in first. But… I’d have to go with butternut. It’s so sweet and a close second 🙂

    I hardly ever comment your blog due to classesm but your eats always look so good geez lol. That breakfast pic- I drool!!! My favorite type of squash has to be butternut, I just love its sweet flavor and love eating it with cinnamon! When I am not home and in a hurry ( which never happens because I always make sure I prep ahead), I would probably eat at my school’s cafeteria , they have so many healthy choices. Hope you have a good day!!

      I LOVE butternut squash, good choice! That’s great that your school cafeteria has good choices, mine certainly didn’t!

    This week has been crazy busy for me too! I have two 25 page papers due tomorrow, I have an oral exam for French today (totally forgot to study for), and I have to create a digital portfolio. When I am in a pinch I usually go to starbucks and get a banana and almonds or just the almonds. Good luck 🙂 See you tonight.

    I need to try acorn squash! I’ve been defaulting to butternut lately. I have one sitting on top of my fridge waiting to be used!

    I’m really intrigued by those Health Warrior bars. I’m a bar fanatic so I like to try them all. And any that have coconut catch my eye!

      I LOVE the starbucks oatmeal! As long as they put enough water in it and you let it sit for 3 minutes like the top says to!

    I love almost any kind of squash, but my favorite is probably butternut! I just wish it weren’t such a pain to cut up!

    I almost always have some sort of snack with me, but if for some reason I forget I will usually stop by a Subway for a sandwich or swing by a grocery store to pick up a protein bar if I just need a snack.

      Haha I have those bumblebees everywhere! And butternut is SO hard to cut up! I have one in my kitchen that I’m avoiding…

    Kabocha is definitely my favourite kind of squash! I haven’t been able to find it at the grocery store in weeks though.

    When I need to grab something to eat in a hurry I usually go for Subway. I love their turkey subs!

      Try different stores, I happened to stop into a different grocery store because I walked past it and I found it!

    Great way to start the morning with a devotion and tea – mine is similar, just with coffee!

    Mmm, kabocha is my very favorite squash, yum! I usually roast mine in halves & then fill each half with plain 0% Greek yogurt & Craisins or raisins… so good! 🙂

    If I’m in a pinch & didn’t bring a snack bar w/me or can’t go home, I usually look for a Subway or Blimpie subs… kind of my “safe” go-to’s.
