WIAW–A Case of the Mondays

November 14, 2012 by Katie

Hey everyone! I hope you’re all having a good week so far. Mine is pretty busy, I had a test yesterday, a presentation tomorrow, an exciting blogger event tonight, and 3 physical therapy appointments!

Since I’m a little strapped for time, we’re going to do a somewhat abbreviated version of WIAW. If you’re new to What I Ate Wednesday, head over to Peas and Crayons to see what it’s all about!

Peas and Crayons

Today’s WIAW comes from Monday, which turned out to be a busy day! I decided to skip my scheduled workout and take a rest day, so my morning started with some devotions and tea:

Then for breakfast I had a microwaved sweet potato with 2 over easy eggs, avocado and sriracha. This has pretty much been my breakfast for weeks now… Loving it.

Right after my morning class, I hung around and chatting with a couple girls and got a little studying done. I snacked on a Health Warrior Chia Bar, which I really liked! I didn’t like their chocolate peanut butter flavor, but this one was really good!

photo 3

I didn’t have time to head home for lunch after class, so I stopped at a Starbucks right by my physical therapist and had oatmeal with a packet of nuts while I did some more studying.

photo 4

I was really hungry when I got home from physical therapy, so I made some tea and snacked on an apple, while I had a kabocha squash in the oven!

photo 5

I chopped it up, sprinkled it with cinnamon and roasted it at 450 degrees for 45 minutes. I ate it with sriracha… this is becoming an addiction. This was part 2 of my afternoon snack:

Dark chocolate for my sweet tooth.

For dinner I had some spaghetti squash with marinara sauce, chicken sausage and zucchini. I forgot to take a picture so I used an old one where I didn’t have zucchini. My drawing totally looks real… right?

And for dessert: protein ice cream!

There you have it! A super speedy WIAW! Have a great Wednesday everyone!

What’s your favorite kind of squash?

Where do you eat when you’re in a hurry and can’t go home/didn’t bring anything?

  1. MizFit says:

**skips off to investigate HEALTH WARRIOR!!!**

  2. Haha…I love your drawing of the zucchini. If I am in a hurry and can’t go home or didn’t bring anything with me I will stop at the gas station right by my work and pick up a string cheese and a bag of almonds…perfect for holding me over.

  3. lindsay says:

hehe, love your drawing! and I love all squash! Just made butternut last night and I love delicata. Hope the PT is going well.

  4. so this thing we have where we are mental twins – i thought it would end after marathon training but apparently it has not? please see my post today because i too have been putting sriracha on EVERYTHING. i’m so glad i got the big container :)

also that sweet potato for breakfast looks awesome. i have some in my fridge that i wasn’t sure how i wanted to use and since i’m mixing up breakfasts this week i think i might make this tomorrow. yum. do you just microwave the potato and then top it with the eggs? right? do you put anything else on it to make it extra delicious? advise me please!

and yea, that zucchini is totally believable :)

    • Katie says:

Haha I microwave it (wrapped it a wet paper towel) for about 5 min, and I just cook the eggs on the stove over easy. And when I eat it, I slice the potato open and then mush each side with my fork, and I also cut up the eggs with a fork and knife. Sriracha applied with just about every bite…

  5. When I’m on the go and dont bring anything to eat with my, I love going to Starbucks or Subway. They have some healthy options. :)

  6. Hehe. I love your spaghetti squash with the drawn-on zucchini! I’m totally doing that if I ever have a food picture missing an ingredient. That’s something that I probably would never have thought to do.

Sounds like you’ve been busy. Hope you have fun with that blogger meet-up! Fun Fun.

And I really can’t pick just one squash. Acorn, butternut, spaghetti, pumpkin, zucchini, yellow… I seriously love them all. Sweet potatoes kind of bother my stomach, otherwise those would be in first. But… I’d have to go with butternut. It’s so sweet and a close second :)

  7. Jessie says:

Ha Ha, I love your zucchini! You really are quite the artist :)

  8. I have a serious sriracha addition!

  9. I’m loving spaghetti squash right now! I also love acorn squash…try roasting it, then baking it with an egg in the center! It’s soo good!

  10. Daybelis says:

I hardly ever comment your blog due to classesm but your eats always look so good geez lol. That breakfast pic- I drool!!! My favorite type of squash has to be butternut, I just love its sweet flavor and love eating it with cinnamon! When I am not home and in a hurry ( which never happens because I always make sure I prep ahead), I would probably eat at my school’s cafeteria , they have so many healthy choices. Hope you have a good day!!

    • Katie says:

I LOVE butternut squash, good choice! That’s great that your school cafeteria has good choices, mine certainly didn’t!

  11. Christina says:

This week has been crazy busy for me too! I have two 25 page papers due tomorrow, I have an oral exam for French today (totally forgot to study for), and I have to create a digital portfolio. When I am in a pinch I usually go to starbucks and get a banana and almonds or just the almonds. Good luck :) See you tonight.

  12. I need to try acorn squash! I’ve been defaulting to butternut lately. I have one sitting on top of my fridge waiting to be used!

I’m really intrigued by those Health Warrior bars. I’m a bar fanatic so I like to try them all. And any that have coconut catch my eye!

  13. I am definitely a butternut squash kind of girl! Those Health Warrior bars look interesting, and I still need to try the Starbucks oatmeal!

    • Katie says:

I LOVE the starbucks oatmeal! As long as they put enough water in it and you let it sit for 3 minutes like the top says to!

  14. kelsey says:

mmm that zuchinni looks soooo good!

  15. I spy a bumblebee from the Broadmoor! ;)

I love almost any kind of squash, but my favorite is probably butternut! I just wish it weren’t such a pain to cut up!

I almost always have some sort of snack with me, but if for some reason I forget I will usually stop by a Subway for a sandwich or swing by a grocery store to pick up a protein bar if I just need a snack.

    • Katie says:

Haha I have those bumblebees everywhere! And butternut is SO hard to cut up! I have one in my kitchen that I’m avoiding…

  16. Haha – love the zucchini photoshopping. ;)

Kabocha, sweet potato, avocado…sounds like a pretty good Monday to me!

  17. Kierston says:

    Zucchini looks does your breakfast!

  18. Bahahaha your zucchini is so green! Where on earth do you find that this time of year? :P

  19. LOVE kabocha sqaush whatever time of the day, so with you on that one; I like dipping it in Dijon mustard though :)

  20. All your eats look great! :) my fav squash is either butternut or spaghetti… So so delicious and versatile in recipes!

  21. I’ve never tried kabocha squash but I’ve been meaning to ever since I started reading blogs. Major fail.

I’ve been eating a lot of spaghetti squash and butternut mainly because it’s so cheap at TJs and so yummy!

  22. I loooove spaghetti squash. It’s so versatile!

  23. I am such a fan of all your eats, especially the combos. hopefully your schedule calms down a bit

  24. You sound as busy as me! Good luck on your presentation tomorrow. :)

Kabocha is definitely my favourite kind of squash! I haven’t been able to find it at the grocery store in weeks though.

When I need to grab something to eat in a hurry I usually go for Subway. I love their turkey subs!

  25. kabocha is my number one squash lover, but I recently discovered that delicata squash is also fantastic and very similar. I’ve been going through them like crazy!

  26. HAHA love the drawing. I love that you keep it real here on your blog :)

  27. Love the improvising of the zucchini!;) Everything looks amazing as usual- especially the kabocha squash and the eggs+sweet potato combo! Happy WIAW:)

  28. Sandy says:

    hehehe love the zucchini ;-)
Great way to start the morning with a devotion and tea – mine is similar, just with coffee!
I am loving the sweet potato for breakfast idea – I might have to try that! I love sweet potato!

  29. LOVE butternut squash! My mom used to scoop out the seeds and put a little pat of butter and breadcrumbs in the bowl of it before baking. It was incredible!

  30. Ahhhh love sriracha!!! Cholula is my #1 tho :)

  31. ahaha you drawn-in zucchini pic totally cracked me up :)

  32. I beginning to think I need to try that protein ice cream! It intrigues me every time you make it ;)

  33. Mmm, kabocha is my very favorite squash, yum! I usually roast mine in halves & then fill each half with plain 0% Greek yogurt & Craisins or raisins… so good! :)

If I’m in a pinch & didn’t bring a snack bar w/me or can’t go home, I usually look for a Subway or Blimpie subs… kind of my “safe” go-to’s.

  34. […] shared a mix of on-the-go eats and quick, healthy meals on Peace Love & Oats last week. Sriracha was the name of the game when it came to the food she made herself: she […]
