Thursday Thoughts

Hey everyone! I hope you’re all having a good week! I’m having a… stressful one. Haha very busy schedule, especially today! But once today is over I can relax… well, a little. That’s just how the end of the semester is I guess! But, enough of that because it’s time for Thursday Thoughts, a place for mindlessness!


1. HAPPY BIRTHDAY DADDY!!!!! Today is my dad’s birthday! He is probably my most loyal reader, so he seriously deserves a birthday shout out. I’m sure many of you say this about your Dads, but my Dad is pretty much amazing. He’s been nothing but supportive, encouraging, helpful and loving my entire life, so thank you for being a great Dad!

2. Can we please discuss Pinterest’s new “secret boards”?!? This is the best thing since sliced bread. Now I can pin things without judgment…

4. Another bit of humor, I may or may not have shared this already… but I saw it and started laughing, it is so MOLLY! You come home and she’s destroyed something and pretends it wasn’t her. She even hides if you try and show it to her…



5. I AM SO EXCITED FOR THANKSGIVING. You are going to hear me say that over and over for the next week. It’s by far my favorite holiday. Why? We get to spend the evening with my mom’s older brother’s family who we only get to see once a year, and they are an entertaining group. Lots of champagne and great conversation (plus food prepared by my cousin who went to culinary school) = best holiday ever.


6. I ran/walked 3 miles on Tuesday and only 1 mile on Wednesday. I had to stop each time because of knee pain, but let me tell you – those were the best 40 minutes of exercise all week. Running is 10x better when you haven’t been doing it, I wanted to hug the treadmill! Yes, I am a little crazy.


7. I saw this recipe for Thanksgiving Baked Apple Pie Apples. Um, apple pie inside an apple?! Yes, please.


8. Speaking of Thanksgiving, I’m making my Great Aunt Avis’s Cinnamon Rolls for Thanksgiving. I definitely miss her more at this time of year. I’m also considering making a mini gluten free batch to see how it goes, just with a normal GF baking flour mix. Thoughts? Suggestions?

    My dog used to be the same with messes. She would hide around a corner, and when you came to find her she would roll over on her back and play dead — cutest thing ever!! Honestly, it’s TOO impossible to stay mad at a dog for long. Which is a great trade because they never stay mad at you long either. 😉
    And I need that apple pie in my life. Need, as in it is crucial to my soul’s survival. Sigh.

      Hahahaha exactly, it’s so hard to be mad at the cute face! And yes, your soul needs some apple pie. Everyone’s does.

    I am a huge fan of Thanksgiving, too, (althought Christmas is number one for me…Christmas Eve specifically) buttttttttttt I still have to talk to my fam and see what they want me to make haha. Hopefully dessert, since that’s my fav 🙂 And number three….totally describes me too. If I’m not in bed by 9:30 at the latestttttttttt, it’s a problem 😉

    That is so funny that you said that about secret boards on pintrest…this was my actual fb post about it last week….my boyfriend was the first one to comment saying that everyone already knows I am a crazy person so why am I trying to hide it…he is so nice.

      I guess I like thanksgiving more because Christmas was always a mess for me – I’ve been stuck at the kid’s table for waaaaay too long!

      Exactly – I’m so excited to just hang out with my family! And my best friend and I both go home, so I get to see her too!

    Thanksgiving is my favorite holiday, too! I have a small family, but I love when we’re all together. I wish I had a relative that went to culinary school!
    I’ve yet to use the secret boards on pinterest yet. I think it would be great for gift ideas, weddings, or pregnancy-related things you don’t want to share yet!
    I think the” life of the party” describes me perfectly. I hsve no shame pulling on the pj’s at 9:00 after a “gathering.”

      Haha my cousin comes in very handy whenever I have cooking related questions! And that’s a great idea to use a secret board as gift ideas, I’m going to do that!

    Haha #4 totally reminds me of our yellow lab… There’s been FAR too many times when something like that has happened. Too funny! (Well, not at the time, but you get what I mean!)And yes, I can definitely agree to #3! 🙂 Can’t WAIT for Thanksgiving either! I’m thinking I need to make cinnamon rolls or something special for breakfast too…

    Number 3 totally hits home for me. I am so tired by 9:30. My mom and sister call me a grandma. No shame. Im so happy that you were able to walk run on Tuesday. When I had my injury I started crying once I was able to walk run. My favorite holiday is Christmas. It was really nice seeing you yesterday.

    I’ve had really good success subbing gluten free bisquick in for ap flours in pretty much every recipe I have tried! Whatever extra leavening that bisquick has, is enough to compensate for the lack of gluten in the flours. Good luck! I love Thanksgiving too!

    Oh my gosh, my dog is hilarious when he destroys things and knows that he’s in trouble. His tail goes right between his legs and his head goes thisclose to the ground…it’s the cutest thing ever. You can’t even stay mad at him because he looks so ridiculous. I don’t know if you’ve seen this video: but if you haven’t it’s quite possibly the best guilty dog thing the Internet has ever produced.

    I’m not sure what I’m having for Thanksgiving this year, I’ve definitely thrown my family for a loop!

    I always bake something for my family though and last year I made an awesome pumpkin roll so even though I can’t have it I’ll probably make it for them!

      Hahahaha oh no, that definitely throws things off for thanksgiving. I remember last year I’d just found out a few weeks earlier that I couldn’t have gluten or soy so I was a mess at Thanksgiving. I was so upset and didn’t let myself just enjoy the holiday.

    And I’m so jealous you guys have Thanksgiving soon! There’s such a long stretch of time between Canadian Thanksgiving and Christmas! 😛 Christmas is definitely my favourite holiday though – I love the excitement and holiday cheer leading up to it.

      That is a long time, but at least you can start Christmas early! Most people here try and wait until after thanksgiving!

    We don’t have Thanksgiving in Ireland though if I have time I will be making a pumpkin pie in its honour! I love Christmas, it’s the biggest holiday in Ireland and it’s all about the Christmas pudding – packed full of dried fruit and traditionally brandy! That is so me btw…life and sole of the party…totally pinning! 🙂

    I love the pics!!! The dog with the pillow is a perfect picture of an instance in our home with our dog Hank…except it was the Xmas tree instead of a pillow. Enjoy those caramel rolls for me! They look amazing!!!

    I actually get to see my family for Thanksgiving this year and I am so excited! I didn’t think I would have the day off, but I do so I am flying to South Carolina for the weekend. I’m not sure what I am going to make, but I’m thinking some kind of dessert.

    Christmas is my absolute favorite holiday – I love the lights and music and trees and spirit of the season.

    I love Thanksgiving too! So great! I usually end up being cook for at least half the dinner. This year it’ll just be my roomy and me, so a smaller scale delicious feast! That apple pie in an apple looks adorable.
