WIAW–First Day of 2013

Happy Wednesday! I hope you all had a great first day of 2013! I had a nice, relaxing day at home – lots of snow shoveling, a quick upper body strength workout, helping my mom use her new slow cooker and taking my friend’s dog out for a walk!

I thought for this week it would be fun to do What I Ate Wednesday on the first day of 2013! If you’re new to WIAW, head over to Peas and Crayons to find out what it’s all about!

My day started out with a baked (microwaved…) sweet potato with an egg and TONS of hummus. Sadly I forgot to take a picture, but here’s my plate afterwards (including my peppermint tea bag).

I also snacked on some M&Ms in the morning. My mom leaves them out in this dish… it’s so dangerous.

After my workout and snow shoveling I wasn’t too hungry but thought I should eat, so I threw together a bowl of puffed corn, sliced strawberries, blueberries and almond milk.

I then did some work and went to walk Penny, after getting home I was HUNGRY and ready for lunch part 2. I sliced up a bell pepper which I dipped in hummus (2 flavors: original and sundried tomato) and then had some lettuce with tzatziki sauce on the side because I hadn’t eaten anything green all day!

Later I went back for some rice chips to eat with more hummus! (this x2!)

I also had an Udi’s Chocolate Chip Cookie for dessert. Seriously, these things were SO GOOD! They lasted over a week and each cookie still tasted fresh and not dried up like most packaged cookies.

For dinner, my mom wanted to try out her new slow cooker, so we followed a recipe from the book that came with it and made roasted chicken with root vegetables. The chicken was great but the veggies were a bit burnt. Here’s my 1st plate and I went back for a bit more chicken and more veggies!

For dessert, I had vanilla ice cream with fresh strawberries (plus some more berries afterwards).

    You should only take AFTER pictures of your dirty plate afterwards from now on.

  2. I got a slow cooker (I call it a crockpot?) for Christmas this year. I just made minestrone soup in it the other day and it was great. I’m looking forward to making more “set it and forget it” type meals!

      I also call it a crockpot, but this one is different, it has a lot of different settings so I think it’s a real slow cooker? Not sure…

    I love using my slow cooker to make soups and stews. Sam from Better With Sprinkles has a great beef stew recipe which was really easy and delicious. Pulled pork and barbeque pulled chicken are favorites, too :) My favorite dessert is froyo with tons of candy/cookie toppings…but I’ll never turn down a piece of cake, brownie, or cookie ;)

  4. I adore that puffed corn cereal, it is like popcorn before it pops. Amazing. I need to use my slow cooker more, that is one of my goals this year

  6. My parents leave a bowl of M&Ms out too, and it’s sooo dangerous! I use the CrockPot quite a bit, especially during the winter months since all sorts of yummy comfort foods can come out of it. Some of our favorites are various soups, shredded barbecue chicken to make into sandwiches, and pot roast.

  7. I got a slow cooker for my birthday last October and I’m kind of in love with it. I got a slow cooker cookbook for Christmas, so that’s not going to change anytime soon! I love it for making chicken, stews, pulled pork and soups.

  8. i cannot handle dishes of m&ms when they are out at my parents…and by cannot handle i mean house immediately upon seeing them…peanut are my weakness for sure. and i love how much hummus you had! i’ve been eating crazy amounts of sun-dried tomato and basil hummus and it is making me so happy! it’s a new to me flavor and i’m loving it. jealous that you’re still home.

  9. I’m obsessed with my slow cooker and have made a ton of great meals in it! Some of my favorites are chili, shredded chicken, broccoli-cheddar soup and Asian beef and broccoli.

  10. my favorite dessert would have to be coffee & another flavor ice cream with lots of toppings and whipped cream. i also love me some cake and cookies! (:

    Oh, I love my crockpot (or slow cooker, as you refer to it). I’ve cooked mac and cheese, lasagna, chicken & rice soup, broccoli and cheese soup, tortellini soup and other yummy dishes in it. :)

  12. I seriously love the slow cooker! I love making soups, stews, chilis and pot roasts in it!

  13. I LOVE the crock pot. Best invention ever. I make salsa chicken in it all the time! (just frozen chicken & salsa & spices. You can shred it & use it on or in anything).

  15. You know, I’ve never ever used a slow cooker. Rather an embarrassing admission coming from a chef, but it is true. I’ve seen some really nice recipes and dishes for them. Your post makes me crave berries. Will have to buy some. My favorite dessert is still and always will be pumpkin pie. There is something magical about the stuff.

    Penny’s coat is gorgeous. I love the array of colors.

    I’ve been using a crock pot everyday lately to make homemade chicken and beef broth. So warming and perfect for the wintry season.

    Oh man I love slow cookers. They really are the best appliance creation (besides blenders/food processors) ever created for kitchens =)

  19. Now that I’m eating meat again I need to try out a slow cooker! I would be no good with bowls of sweets around the place!
