Tuesday Thoughts?

Soooo I realized I’m probably not going to be posting a Thursday Thoughts post this week since 1) It’s Thanksgiving and I’ll hopefully be enjoying family time and 2) you all are enjoying family time and no one reads my blog on holidays! However, I have a LOT of thoughts piling up for this week so I thought I’d go ahead and do this on Tuesday! It’s really my favorite post of the week…


1. SURPRISE!!!! Okay, not really a surprise, but a change of mind. I’m heading home for thanksgiving TODAY instead of tomorrow morning! Why? Well, I realized my only class today included listening to presentations, and honestly I wasn’t going to pay attention, so why not just go home?! I actually considered going home yesterday afternoon, but I had a PT appointment this morning that I didn’t want to miss. Plus I SAVED $$ my moving my flight. Gotta love Southwest.


2. Check out my guest post today on Kamila’s blog, Sensual Appeal! I write about motivation for any goal that you might you have – whether it be running a marathon or getting through grad school!


3. I already mentioned that I’m listening to Christmas music, but I LOVE the Glee Christmas station, especially all things Michael Buble. This man has a gift. Is it weird that I decided about 7 years ago that I want him to sing at my wedding? I should start saving $$ for that one…

4. My friend sent me this picture the other day. Can you tell what’s hanging from their car? How cute and clever is that!?!?

5. I finally tried the Kombucha trilogy flavor. I usually go for the safe ones, like raspberry, cranberry, etc., because I don’t know what trilogy means?!?! Anyway, I was enticed by the pretty colors and the sale price so I tried it and it’s great! Still don’t know what flavor it is though…

6. I was at a grocery store grabbing a couple necessities that I couldn’t find at Trader Joe’s and I saw this on display. It was fate.

7. So I’m already doing Tina’s Best Body Boot Camp, and Amanda’s Holiday Bootie Buster Challenge, but I saw this challenge today and I’m super tempted, mostly because you get an “elf buddy” (aka another participant) to encourage and who encourages you! I just think it would be fun!


8. Another music obsession? Glee’s Grease album! I LOVE Grease (who doesn’t!?!?) and I loved the episode so much that this happened:

9. Yesterday I realized I had extra time to get work done because I didn’t have Girls On The Run practice. So what did I do? I went and hung out with Molly. #sorryimnotsorry

WIAW–School Day!

Hey everyone! I hope you’re all having a good week, only 4 days long!!! Lol okay, 3 for me, but I won’t rub that in. Anyway, since it’s Wednesday it’s clearly time for another What I Ate Wednesday! If you’re new to WIAW, head over to Peas and Crayons to find out what it’s all about!

I started out my morning with quite a wake up call. I was laying in bed (I’d been up since like 4…) and at 6am my brother texted me asking if I had his car keys. Oops. I leapt out of bed, threw on my workout clothes and literally ran over to his apartment! My bad. Stealing car keys. Since I was up and ini my workout clothes I headed to the gym and started out with a little bit of elliptical action at the gym, some upper body weights and a few ab moves, and then plenty of stretching and rolling out my legs.

After I showered I ended up just reading and getting some work done. I we weirdly just not hungry this morning, but finally around 9:45 I was ready to eat! I had a sweet potato topped with an over-easy egg and the about a half a bag of spinach sautéed with nutritional yeast and some cayenne pepper. I served it with salsa!

I headed out the door to class after breakfast, getting there early so I could get a little reading in. By this time it had been a couple hours since breakfast but I couldn’t get lunch until after class, so I had an apple and a KIND bar. I also got a Kombucha, but never ended up drinking it…

For lunch I headed down to the French Market, which is near my school. It’s this really cool place that’s set up like an out-door market, except it’s indoor. There are places to buy fresh fruit and veggies, and then several specific vendors, from healthy juices and crepes to kosher food to Asian. I decided to try out Karen’s Raw, which I’ve seen all over Chicago. All of their food is soy-free and the woman working there showed me everything that was gluten free. She was so helpful! I chose the Sprouted Living Salad.

At first when I opened it up I was disappointed because it was basically a TON of spinach and a few veggie toppings, but once I added the dressing and the onion crisps topping, it was SOOO GOOD. Like really good. Unfortunately, tons of raw veggies don’t do wonders for my digestive system… Oops. So good though.

After lunch I headed back to school for my second (and last) class, and then hopped on a bus to get home. Luckily I got right onto an express bus so it took less time! Haha so like 40 minutes instead of 60. By the time I got home my stomach felt kind of off, so I just wanted something bland. I made a quesadilla with cheese and black beans, served with a little more salsa.

A bit later I had some vanilla protein ice cream with “chocolate sauce” made from protein powder and cocoa, with some dried fruit and corn flakes cereal for toppings. Delicious! I also had a some almond butter as well, so good.

WIAW–First Last Day of School!

Haha, now that’s an oxymoron for you: First Last day of school! I (currently) have zero intention of going back to school after I finish law school at the end of the year, so Monday was my very last first day of school! Haha sorry no picture of my outfit, I wore shorts and a plain shirt… I only had one class to go to. Anyway, I thought I’d share with you my eats from Monday! I started off my day with a workout at the gym where I did 15 min on the elliptical and then I did this ab circuit and this upper body strength circuit from Peanut Butter Fingers! I love Julie’s workouts when I’m looking to mix things up!

Then, by the time I’d showered, meandered around, found something to wear, I realized I had… oh wait 15 min to make breakfast, eat it and get my butt out the door! Oops! I made Tina’s 2 Ingredient pancake (no photo), however mine looked nothing like hers… haha it was so big I could not for the life of me flip it with my little spatula! I had to flip it in 3 parts. So I just smothered it in some almond butter and called it a day!

I headed downtown for class and then afterwards I did some much needed shopping. I gained back a little weight over the spring and avoided buying new jeans. I’ve realized I’m at a healthy weight (although I don’t weigh myself anymore) so I just needed to get some jeans. I found a good (and inexpensive) pair at H&M and also got a cute striped top at Old Navy! Successful.

(this was the face I made when I sent this photo to my friend, to whom 2 hours earlier I had been complaining that Forever 21 had too many shirts with horizontal stripes and I don’t look good in horizontal stripes…)

In the middle of shopping my hunger struck, so I stopped and sat at an area outside an office building with trees and benches and enjoyed my lunch. It was 1/2 of an avocado, 1 tomato and a ton of shrimp mixed up with dill, salt and pepper, balsamic vinegar and olive oil. So good!

By the time I got home I was pretty hungry but knew the dinner I’d planned would take some time to make, so I sliced up a bell pepper and ate it with a mixture of applesauce and PB2… I don’t recommend this mix. I wish I’d had some hummus! I also sipped on a chia kombucha drink that I’d bought this weekend.

For dinner I’d made a meatloaf! The recipe was from paleomg. My loaf was made with beef (the original recipe called for ground chicken, but the beef was sold in exactly 1 lb packages and I figured it would be fine). I also didn’t have any basil so I left that out. The cooking time took a little longer, but it turned out well! I served it over some “zucchini noodles” with marinara sauce and nutritional yeast.

For dessert I had chocolate protein ice cream with some PB2 and maple syrup on top.

A little later I was feeling hungry/snacky so I had a BIG bowl of popcorn. And yes, some of it’s burnt… these things happen.

What I ate Monday…

I like showing my Mondays for my WIAW for a couple reasons:

1) It shows you all some ideas for packing food for lunch (even though I tend to pack the same thing…) since I have to eat lunch and dinner at school.

2) I can write it on Tuesday and have it ready to go! Haha

Peas and Crayons

Before my HIIT workout from Monday, I had half a banana to give me some energy for the gym. When I got home, it was time for breakfast! I made some banana chia oats and then on the side a little bit of Greek yogurt mixed with pumpkin and cinnamon.

To make the oats, I put 1/3 C oatmeal, 1/3 C water, 1/3 C almond milk and 1 T chia seeds in the saucepan before I left for my workout. This allowed the chia seeds some time to thicken up. By the time I got back, all the liquid had been absorbed!

Then I added another 1/3 C water and heated up the oats. When they were near done, I mixed in a smashed 1/2 banana. Ta da! Very voluminous, delicious and nutritious! You should try adding Chia Seeds to your meals sometimes. They are called a “superfood” and are a great source of Omega 3’s and more easily digested than Flax! Plus they’re fun when they thicken things up…

That morning I was really feeling the “Mondays” so I wasn’t so much in the mood to pack both lunch and dinner… Normally on Wednesday I’ll only pack one meal and let myself buy the other. So I decided to switch Monday and Wednesday this week and buy something for lunch! Apparently I am a creature of habit, because I hit up I Dream of Falafel again! I loved it the first time I went and keep going back! The guy who works the cash register remembers me and knows not to add pita bread to my order! Love them.

I got the salad with chicken and raita sauce… again. It’s a winner. I might try the falafel next time though – mix it up a bit!

For my afternoon snack, I had packed an apple (un-pictured) and a Bobo’s Oat Bar. I’ve talked about them before, but I love these bars and was so excited when I saw the Whole Foods started carrying them! Now my poor friend who lives in Colorado doesn’t have to send them to me anymore!

However, when I got the link to put into this post, I noticed that they had regular bars… and gluten free bars. Apparently the fact that their package says “wheat free” does not mean that they are gluten free… And now I know why I wasn’t feeling awesome last night. Winning.

I also got a Kombucha at Whole Foods this weekend to sip on. I actually make these things last all week. Carbonation bothers my stomach and I can’t drink the whole thing, I just sip on a little bit each day! This one is passion fruit… I still like the guava the best.

For dinner, I ate the oat bar and the salad I brought. It was a simple mix of kale, beets, roasted butternut squash and Annie’s Lite Honey Mustard Dressing.

When I got home from school around 8:30 I was a little hungry (since I had a salad and oat bar at 5:30 before class…) So I decided to make myself a delicious Chocolate Mousse Protein Cupcake!

Aaaaand then I made a chocolate chip one… It’s like potato chips for other people, you just can’t have one! So delicious.

Carrot Cake Oats!

I had to switch up my training plan this week (for the 10 miler in November!) since I’m hopefully running my long run with someone else on Friday afternoon! I was supposed to do a 7 mile speed training run tomorrow, but I knew that would be a bad idea to do the day before my 8 mile long run!

Instead, I ended up doing a 5 mile speed training run today! I had hoped to run outside since I’ve been on the treadmill all week, but I woke up and didn’t even want to step outside! 48 degrees, raining and a wind advisory! Let’s just say my 1/2 mile walk to the gym was a workout on it’s own!

So I hit the treadmill for this 5 mile speed workout (I adjusted the 7 mile one I had on my plan).

5 Mile Speed Workout

miles 0-1 – warm-up speed

miles 1-2 – run at an 8:09 min/mile pace (this was 7.4 on my treadmill)

miles 2-2.25 – jog (for me, 6.7)

miles 2.25-3.25 – run at 8:09 min/mile pace

miles 3.25-3.5 – jog

miles 3.5-4.5 – run at 8:09 min/mile pace

miles 4.5-5 – jog

then cool down walk!

I ended up finishing the 5 miles in 42:33, which was an 8:31 min/mile pace. I was really worried when I saw the 7 mile speed training on my schedule, but I totally could have kept going for the last two miles! Also, the speed training for 7 miles included the same 3 miles at a fast pace, just a half mile between each one rather than a quarter mile. So I did complete the 3 miles (which was my plan) I just took out 2 miles of jogging and cool down.

Well, needless to say, after heading home to roll out and shower, I was STARVING.

And lucky for you, I was feeling creative and came up with a brand new oats recipe!

Carrot Cake Oatmeal


about 1/4 cup of grated carrots, steamed in microwave beforehand

1/3 cup oats

1/3 cup almond milk (or milk of choice)

1/2 cup water

1 egg white (3 T)

1/2 T chia seeds

plenty of cinnamon and nutmeg (to taste)

raisins and walnuts to top!


Combine oats, water, milk and egg whites on stove and begin to heat, Be sure to stir in the egg whites! Once oats start to cook, add in carrots, chia seeds and spices. When it’s done cooking, pour into bowl and add toppings!

It was delicious and perfect for a cold, rainy morning!

On Wednesdays, I have to pack both a lunch and a dinner, since I’m at school until 7:30 and then don’t get home until 8:30. I was packing up my food and decided that I was really tired of the food I can pack. Do you ever get that way?

For dinner, I packed the same salad I had yesterday (and monday…) since I don’t have time to go buy something. But for lunch, I decided to treat myself. It’s been that kind of week. So how do I like to treat myself?

Protein Bar!

If you live in Chicago, you HAVE to try the Protein Bar! I talked about it when I got that smoothie, but I love the local and sustainable ingredients they use, and everything is customizable! You can make anything Vegan, Gluten-free or dairy free!

For lunch, I decided to get the Chicken Chili Quinoa Bowl!

It had quinoa, topped with their chicken chili and cheese! I got their vegan cheese (the guy was very confused when I asked for chicken chili and vegan cheese; I had to explain I was avoiding dairy) and then usually they have Greek yogurt on top (like sour cream) but I also didn’t get that.

It was absolutely delicious and totally worth the 5 block walk through torrential winds and rain! Seriously, those poor tourists I kept passing today, they must have thought our city has the worst weather! Oh wait… it does.

So while I was there, I saw that they had Kombucha Synergy drinks, so I grabbed one to drink back at school. I’d never had it, but I’ve heard so much about them on other people’s blogs!

Did anyone else know it was fizzy? Did anyone else toss it in their back pack and then not be able to open it for hours because it would fizz all over?


Oh. Well I did. Oops.

I got the Strawberry Serenity flavor and, once I finally got to taste it, it actually reminded me of Strawberry Andre! You know, the $5 champagne? Haha okay so it was better than Andre, but it had that fermented strawberry taste! It was pretty good!

When I got home late from class I was in the mood for something warm. It was raining and SUPER windy in Chicago, so by the time I got home I was wet and cold! Umbrellas are just pointless… mine flipped over about 3 times this morning before I gave up.

I decided to try out Katie’s Single Lady Cupcake from Chocolate Covered Katie. I used Garbanzo flour and added in some cinnamon and nutmeg. It was good! Although I do wish I had remembered to spray the ramekin first! It was hard to get out… haha.

I put a little PB on it, but the real winner was the Cranberry Apple Butter from Trader Joe’s. Sooooo delicious! Went perfect with the cinnamon flavor!
