Favorite Ways To Use Almond Milk

Until I started putting this post together, I didn’t realize just how much almond milk I use every day! My favorite is Blue Diamond’s Unsweetened Vanilla Almond Breeze – not only does it taste good, but at 30 calories a cup I don’t even think twice about putting it in a lot of what make for the day. I also buy it often because it’s sold at every grocery store I go to, even Trader Joe’s!

Since I’m generally avoiding dairy, almond milk is a perfect replacement for whenever I would use cream or milk, such as in my coffee! I actually keep one of these smaller boxes in our refrigerator at work to add to my coffee, and it lasts me about two weeks!

Another way that I use almond milk in the morning is in my Shakeology! I loooooove Shakeology, but mixing it with almond milk instead of water makes it about a million times better! (if possible… haha). I just use 1 cup almond milk, 1 scoop Shakeology and 4 ice cubes: voila!

I also use almond milk in several recipes, anywhere that the recipe calls for milk. Here are some of my favorites and some recipes that I’d love to try from my Pinterest boards!

Chia Pudding

3 ingredient Chia Pudding 1 (13.5oz) can coconut milk* 1/4 cup chia seeds 1 tbsp. honey 1 tsp. vanilla (optional)


Paleo Porridge

Paleo Porridge (Grain and Nut Free). For those folks who still need a warm bowl of stick to your ribs goodness, but without all the grains and nuts.

Crunchy Monkey Shakeology

Thursday Thoughts

1. Thank you for all your sweet comments on last week’s Thursday Thoughts and my “thought” about having Hashimoto’s and adrenal fatigue. It’s definitely throwing me for a loop because some days I’ll feel great and others I’ll want to crawl under my desk and sleep all day… Haha but who doesn’t want an extra nap?


2. KNOCK ON WOOD. I do not want to jinx it, but can we discuss the weather this winter?? At first I just thought I’d had a more positive outlook on life, but no, no. It’s the weather. We had ONE week of sub zero temps and now we get above freezing every day. I’m almost paranoid – what is winter doing? Is it trying to mess with my mind? Either way, I’ll take it.



3. I’ve been so busy with work, beachbody coaching, my small group, and my etsy shop (custom orders!) that I’ve barely had time for Pinterest!!! What has this world come to??


4. I saw this and immediately took a screen shot. Story of my life. I went out with friends to celebrate one getting a big interview last Saturday, and when they all decided to switch bars at about 10-10:30, I went straight home to bed… (granted, we started celebrating at 3, so I’m not toooo much of an old lady).



5. Is anyone else watching The Bachelor this season? (don’t worry – NO spoilers!). I was going to boycott it since I legitimately almost signed up and thought it would be too painful to watch MY bachelor date other women, but after watching the first three episodes, I realized 1) he wouldn’t have picked me, well, probably and 2) there’s no way I would have walked down a street in LA in a bikini on national television, so good thing I didn’t sign up 😉


6. My friend sent me this picture the other day and I immediately sent it to two more of my friends. How adorable?? I think we all need some shark hats for those rough days.



7. Did I mention that I have become a reading machine? Because I have. With winter weather/people not wanting to walk, my bus commute has taken about 10-15 min extra nowadays – meaning more reading time. I literally get 75-80 minutes of exclusive reading time every day now. Just finished a book my grandfather recommended: Not a Penny More, Not a Penny Less by Jeffrey Archer and I really liked it! Good job, Jack.

Pinterest Outfits Made Affordable

Another one already? Yep! I saw this outfit and wanted to try to recreate it now before it starts to get warm (haha, which will be in JUNE).

If you’re curious, here are the two other editions of Pinterest Outfits Made Affordable that I’ve done:

What I like most about this outfit is its simplicity. Most of the pieces are things that most people already have in their closets. It’s simple, classic and can be worn to work (depending on your skirt length…) out at night or even to a nice brunch.

The shirt is the easiest piece. Just find a long-sleeved black shirt and choose a neckline that works best for you: turtleneck, crew, boatneck or v-neck.

The skirt is the whole reason I picked this outfit: I am a sucker for a cute mini! Seriously, favorite piece in any wardrobe. I knew I’d have a hard time finding an exact look-a-like for the picture above, so I came up with some options. Like the black shirt, find a skirt that fits your style. For this outfit, the key is just to find something that will work well with all black (I’d pick #1!).

These ankle boots are definitely in-style this season, so they’re easy to find just about anywhere. Also, because most stores are starting to stock spring clothing, you might be able to find some of these on sale!

The last piece in the outfit is the bracelet. For the model’s look, it appears to be several bangles together, so I chose some pieces in both gold and silver that would give a similar look.

And yes, I didn’t include black tights. I have enough faith in my readers that you all can find a pair of black tights on your own! Haha.

Pinterest Outfit Made Affordable

I got a really great response from my first Pinterest Outfit Made Affordable post, so I thought I’d do it again! Thank goodness I have so many pinterest outfits pinned! Haha. Here’s the next look that I love, which I pinned from Anthropologie. This is a little more office-oriented than the last one, but the look could also be great for a lunch or shower.




For the top I just went for a white, short sleeved top and tried to find some with a little extra detail on the front. The top above is very unique so it’s best to just find a white top with some detail that you really like.

The skirt color was a little difficult, so I expanded the emerald green into navy blue as well, which would look just as great with the overall outfit.

The shoes in the photo looked black with pointed toes and a little embellishment. If you already have black flats, then just wear those!

I do have to say, however, that I wouldn’t wear black flats with this outfit. Personally I’d go for metallic or a brown to compliment the emerald green color, so these are the shoes that I would choose to wear:

Top it off with some pretty, dangling earrings:

And a metallic bracelet. You could even wear a couple thinner ones together to get a layered look:

Simple as that! Once you have the basics of the outfit (skirt and shirt) the accessorizing is really whatever works best for your style and what you already have in your closet.
